Simple Chicken and Broccoli Skillet

A quick, healthy-ish one-pan chicken and broccoli dinner that cooks in 20 minutes

Ingredients
  

  • - 2 large chicken breasts sliced thin
  • - 3 cups broccoli florets fresh or frozen
  • - 2 tablespoons olive oil
  • - 3 cloves garlic minced
  • - 1 teaspoon onion powder
  • - 1 teaspoon paprika
  • - Salt and pepper to taste
  • - ½ cup chicken broth
  • - 1 tablespoon soy sauce
  • - 1 tablespoon lemon juice
  • - Optional: red pepper flakes or parmesan, cooked rice or pasta

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced chicken, season with salt, pepper, onion powder, and paprika, and cook until golden.
  2. Add garlic and cook for 30 seconds.
  3. Add broccoli and stir.
  4. Pour in chicken broth and soy sauce.
  5. Cover and simmer 5–7 minutes until broccoli is tender and the sauce reduces.
  6. Stir in lemon juice.
  7. Serve over rice, pasta, quinoa, or enjoy straight from the skillet.
