Simple Chicken and Rice Casserole

A cozy, creamy one‑dish chicken and rice dinner that practically cooks itself.

Ingredients
  

  • - 2 cups cooked chicken shredded or diced
  • - 1 cup uncooked long‑grain white rice
  • - 2 cups chicken broth
  • - 1 can cream of chicken soup
  • - 1 cup milk
  • - 1 cup shredded cheddar cheese
  • - 1 teaspoon garlic powder
  • - 1 teaspoon onion powder
  • - 1 teaspoon paprika
  • - Salt and pepper to taste
  • - 2 cups broccoli florets optional but recommended
  • - Optional toppings: crushed Ritz crackers parsley, extra cheese

Method
 

  1. Preheat oven to 375°F.
  2. In a large bowl, mix rice, chicken broth, cream of chicken soup, milk, garlic powder, onion powder, paprika, salt, and pepper.
  3. Stir in cooked chicken.
  4. Add broccoli if using.
  5. Pour mixture into a casserole dish and spread evenly.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add cheese on top, and bake 10–15 more minutes until bubbly and golden.
  8. Let rest 5 minutes before serving.
