  • - 2 cups cooked rice day‑old is best
  • - 1 cup cooked chicken diced or shredded
  • - 2 tablespoons olive oil or butter
  • - 1 cup mixed vegetables peas, carrots, corn, etc.
  • - 2 eggs
  • - 3 tablespoons soy sauce
  • - 1 tablespoon sesame oil optional
  • - 2 cloves garlic minced
  • - 1 teaspoon onion powder
  • - Salt and pepper to taste
  • - Optional: green onions sriracha, ginger, chili flakes

Method

  2. Heat olive oil or butter in a large skillet or wok.
  3. Push the oil to one side, add the eggs, and scramble them.
  4. Add the mixed vegetables and cook until warmed through.
  5. Add the cooked chicken and let it heat up.
  6. Add the rice, breaking up any clumps with your spatula.
  7. Stir in soy sauce, sesame oil, garlic, onion powder, salt, and pepper.
  8. Fry everything together for a few minutes until well combined.
  9. Serve hot with green onions, sriracha, or extra soy sauce if desired.
