Method
- Heat olive oil in a large pot. Add onion, carrots, and celery; cook until softened.
- Add garlic and cook for 30 seconds.
- Pour in chicken broth.
- Add cooked chicken, thyme, parsley, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add egg noodles and cook until tender.
- Taste and adjust seasoning; add lemon juice if desired.
- Serve hot.
