Ingredients
  

  • - 2 tablespoons olive oil
  • - 1 onion diced
  • - 3 carrots sliced
  • - 3 celery stalks sliced
  • - 3 cloves garlic minced
  • - 8 cups chicken broth
  • - 2 cups cooked chicken shredded or diced
  • - 2 cups egg noodles
  • - 1 teaspoon dried thyme
  • - 1 teaspoon dried parsley
  • - 1 bay leaf
  • - Salt and pepper to taste
  • - Optional: lemon juice fresh parsley, red pepper flakes

Method
 

  1. Heat olive oil in a large pot. Add onion, carrots, and celery; cook until softened.
  2. Add garlic and cook for 30 seconds.
  3. Pour in chicken broth.
  4. Add cooked chicken, thyme, parsley, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add egg noodles and cook until tender.
  7. Taste and adjust seasoning; add lemon juice if desired.
  8. Serve hot.
