Ingredients
  

  • For the stir fry:
  • - 2 chicken breasts sliced thin
  • - 3 cups mixed vegetables broccoli, carrots, peppers, snap peas
  • - 2 tablespoons olive oil
  • - 1 teaspoon garlic powder
  • - 1 teaspoon onion powder
  • - Salt and pepper to taste
  • For the sauce:
  • - 1/4 cup soy sauce
  • - 2 tablespoons honey
  • - 1 tablespoon rice vinegar or lemon juice
  • - 1 tablespoon cornstarch
  • - 1/2 cup chicken broth
  • - Optional: red pepper flakes sesame oil, ginger

Method
 

  1. Slice chicken thin so it cooks quickly.
  2. In a bowl, whisk soy sauce, honey, rice vinegar, chicken broth, and cornstarch.
  3. Heat olive oil in a large skillet. Add chicken, season with garlic powder, onion powder, salt, and pepper. Cook until golden.
  4. Add vegetables and cook until softened.
  5. Pour sauce over chicken and veggies; stir until thickened.
  6. Simmer 3–5 minutes until glossy.
  7. Serve over rice, noodles, or quinoa.
