Simple Crockpot Chicken and Potatoes

Ingredients
  

  • - 4 chicken thighs bone‑in or boneless
  • - 1 lb baby potatoes halved
  • - 1 small onion sliced
  • - 3 cloves garlic minced
  • - 1 cup chicken broth
  • - 1 tsp salt
  • - ½ tsp black pepper
  • - 1 tsp paprika
  • - 1 tsp dried thyme or a few sprigs fresh
  • - 2 tbsp butter melted
  • - Fresh parsley for garnish optional

Method
 

  1. Instructions
  2. Add the potatoes, onions, and garlic to the bottom of the crockpot.
  3. Season the chicken with salt, pepper, and paprika, then place it on top of the vegetables.
  4. Pour the chicken broth around the sides of the crockpot (not directly on top of the chicken).
  5. Drizzle the melted butter over the chicken and sprinkle thyme on top.
  6. Cover and cook on LOW for 4–6 hours or HIGH for 2½–3 hours, until the chicken is tender and the potatoes are soft.
  7. Garnish with fresh parsley before serving.
