Add the ground beef and cook until browned, breaking it up as it cooks.
Stir in the diced onion and garlic; cook until softened.
Add paprika, chili powder, salt, and pepper; mix well.
Pour in the beef broth, diced tomatoes, and Worcestershire sauce.
Add the uncooked rice and stir to combine evenly.
Bring the mixture to a simmer, then reduce heat to low.
Cover and cook for 18–20 minutes, or until the rice is tender.
Stir in the mixed veggies and let them warm through.
Sprinkle shredded cheese over the top and let it melt.
Garnish with green onions and serve warm.
