Fast, flexible, and comforting, it’s a one‑pan meal that tastes like effort — even when I barely have any left.

Ingredients
  

  • 1 lb ground beef 80/20 or 90/10
  • 1 cup long‑grain white rice uncooked
  • 1 medium onion diced
  • 3 cloves garlic minced (or 1 tsp garlic powder)
  • 1 can 14.5 oz diced tomatoes
  • 2 cups beef broth or chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese cheddar or blend
  • 1 cup mixed veggies peas, corn, carrots, bell peppers
  • 2 tbsp olive oil
  • 2 tbsp chopped green onions optional garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it up as it cooks.
  3. Stir in the diced onion and garlic; cook until softened.
  4. Add paprika, chili powder, salt, and pepper; mix well.
  5. Pour in the beef broth, diced tomatoes, and Worcestershire sauce.
  6. Add the uncooked rice and stir to combine evenly.
  7. Bring the mixture to a simmer, then reduce heat to low.
  8. Cover and cook for 18–20 minutes, or until the rice is tender.
  9. Stir in the mixed veggies and let them warm through.
  10. Sprinkle shredded cheese over the top and let it melt.
  11. Garnish with green onions and serve warm.
