Ingredients
  

  • - 1 lb ground beef
  • - Ground turkey or chicken optional
  • - Cooked rice white, brown, or cilantro‑lime
  • - Quinoa or cauliflower rice optional
  • - 1 bell pepper diced
  • - 1 cup corn
  • - 1 cup black beans
  • - 1 tomato chopped
  • - 1/2 red onion diced
  • - Lettuce or shredded cabbage
  • - 1 tbsp taco seasoning
  • - 1 tsp paprika
  • - 1 tsp garlic powder
  • - Salt and pepper
  • - Salsa
  • - Sour cream
  • - Shredded cheese
  • - Avocado or guacamole
  • - Lime wedges
  • - Cilantro

Method
 

  1. Brown the ground beef in a skillet, breaking it apart as it cooks.
  2. Add taco seasoning, paprika, garlic powder, salt, and pepper. Stir in a splash of water and simmer until saucy.
  3. Prepare your base: cook rice or warm leftover rice. You can also use quinoa or cauliflower rice.
  4. Chop and prep all veggies: bell pepper, tomato, onion, lettuce, corn, and black beans.
  5. Assemble your bowl: add rice, top with seasoned beef, then layer on the veggies.
  6. Add toppings like salsa, sour cream, shredded cheese, avocado or guacamole, lime juice, and cilantro.
