Simple One Pot Pasta with Vegetables

A fast, cozy one‑pot pasta loaded with vegetables. Everything cooks together — pasta, broth, and veggies — for a simple, flavorful, no‑mess weeknight meal.

Ingredients
  

  • 8 oz pasta any shape
  • 1 –2 tbsp olive oil
  • 3 –4 cloves garlic minced
  • 1 small onion diced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach or kale
  • 1 small zucchini sliced
  • 1 bell pepper sliced
  • 3 cups broth or water
  • 1/2 cup grated Parmesan
  • Salt to taste
  • Pepper to taste
  • Optional: chili flakes basil, leftover cooked chicken

Method
 

  1. Sauté garlic, onion, and vegetables in olive oil until softened.
  2. Add the pasta and pour in the broth (or water).
  3. Simmer everything together until the pasta is tender and the veggies are cooked.
  4. Stir in Parmesan to create a silky, flavorful sauce.
  5. Season with salt, pepper, and optional chili flakes or basil. Serve warm.
